Old Fashioned Apple Dumplings

2 cups sugar
1 tsp cinnamon
1/4 tsp nutmeg
2 cups water
2 Tbsp butter
2 1/2 cups flour
4 tsp baking powder
3/4 tsp salt
1/2 cup shortening
scant 3/4 cup milk
apples - sliced small

Make thin syrup by mixing sugar, cinnamon, nutmeg, water and butter.  Cook over medium heat for 5 minutes.
Keep warm
Cut shortening into sifted flour, baking powder and salt until fine as cornmeal. 
Stir in just enough milk to make soft dough.
Roll out on floured board to 1/4" thickness in rectangular form
Spread with melted butter
Top with apples
Sprinkle apples with cinnamon and sugar
Roll as for a jelly roll and slice about 3/4 inch thick
Place in large pan.
Pour syrup over apple roll slices
Bake at 350 degrees for about 45 minutes or until light brown on top

Homemade Ice Cream - this is it!

Ok - I actually found this in my other grandma's recipes.....

4 eggs
2 cups sugar
3/4 pint cream
2 Tbsp vanilla
1 1/2 quarts milk

Beat two eggs at a time
Add sugar, cream and vanilla
Stir in milk, but leave about 3 inches from the top of the ice cream maker
Mix well and freeze.

And remember - it is not recommended to eat raw eggs.  Of course, we all did it as kids and survived, but still....

Mom Zeigler's Chilla' Sauce

8 quarts ripe tomatoes
3 cups sweet red and green peppers
2 cups onions, ground fine
2 cups white sugar
1/2 cup salt
1 1/2 quarts vinegar
3 tsp cloves
3 tsp cinnamon
2 tsp ginger
2 tsp nutmeg
1 tsp black pepper
1/2 tsd hot pepper
2 tsp celery seed
5-6 jalapenos (optional if you like things spicy)

Cook all together until thick, stirring often.
Put into quart jars and seal

Hash Brown Casserole

2 pounds thawed frozen hash brown potatoes
1/2 cup butter - softened
1 tsp salt
1/4 tsp pepper
10 oz grated cheddar cheese
1 pint sour cream
1 can cream of chicken soup

Mix all together in large bowl
Put into 9x13 pan
Bake at 350 degrees for one hour

Broccoli Salad

1 bunch fresh broccoli - heads only
1 small onion, chopped
1/2 pound bacon - fried crisp and crumbled
1 cup shredded cheddar
1/2 cup mayonnaise
1/4 cup white sugar
2 Tbsp white vinegar

Mix broccoli, onion, bacon and cheese together
Mix together remaining ingredients in separate bowl and pour over salad
Refrigerate 4 hours before serving. 

Mom Staples Hot Potato Salad

4 cups cooked sliced potatoes
1/4 lb bacon - raw and cut into small pieces
3/4 cup chopped onion
2 Tbsp flour
2 tsp salt
1 egg
1/4 cup sugar
1/4 cup cider vinegar
1 cup water
1/4 cup parsley, fresh or dried
1 tsp celery seed

Fry bacon until crisp.  Remove from fat
Fry onion in fat until tender.  Remove from fat
Put flour and salt in fat to clear it
Mix egg and remaining ingredients together.  Put in frying pan
Pour hot mixture over potatoes

Home made meatballs

3 lbs ground beef
2 eggs
1 good sized onion, chopped very fine
salt
pepper
garlic salt
grated cheese (just a few tablespoons)
crackers or bread crumbs

Mix together beef, eggs, onions, salt, pepper and grated cheese
Use a fork to mix as the mixture will get pretty messy if you use your hands
Add enough crumbs to hold the meat together.
Make into balls
Fry in fat.

I use about a pound of lean ground beef, a pound of ground turkey and a pound of ground pork. I also use the italian flavored bread crumbs. Sometimes, I'll add just a dash of Worcestershire sauce as well. Yummy

Spaghetti Sauce

3 large cans tomato juice
3 cans tomato paste
All the spices below are to be used to taste. 
parsley
garlic salt
salt
pepper
bay leaf
touch of cinnamon and nutmeg

Serve with Homemade Meatballs over Vermicelli

Cook together over medium heat in large pan
Expect to cook at least 3 hours
Place homemade meatballs in sauce and let simmer another two hours

Pancakes

2 cups flour
3 tsp baking powder
1 tsp salt
2 eggs, beaten
2 cups milk
1/4 cup margarine or butter, melted

Stir together flour, sugar, baking powder and salt
Add eggs, milk and butter
Mix well
Cook in skillet on one side until bubbles form in pancakes
Turn once and cook until light brown

Breakfast Potatoes

8 medium sized potatoes, cooked and cooled
1/4 pound cheddar cheese, grated
1/2 pint whipping cream
1 small onion
1/2 stick butter
1 tsp salt

Grease a 9x13 cake pan
Peel and grate potatoes
Mix in grated cheese
Mince onion and salt in cream and pour over potatoes
Dot with butter
Bake at 400 degrees for 1 hour
Can be made early and refrigerated until it's time to bake

Caramel Corn

2 cups brown sugar
1 cup butter or margarine
1/2 cup dark Karo syrup
1 tsp butter flavor
1 tsp baking soda
9 qts air popped popcorn
peanuts (optional)

Boil brown sugar, butter and Karo for 5 minutes
Add butter flavor and soda
Pour over popcorn and stir in big roaster pan
Add peanuts
Bake at 200 degrees for one hour
Stir constantly until cool
Put into bags

Granola

6 cups rolled oats
1 cup shredded coconut
1 cup wheat germ
1/2 cup shelled sunflower seeds
3/4 cup cashews or almonds, chopped
1/2 cup sesame seeds
1/2 cup cooking oil
1/3 cup water
1 1/2 tsp salt
1 1/2 tsp vanilla
1 cup raisins

In large bowl, combine oats, coconut, wheat germ, sunflower seeds, nuts and sesame seeds.
Mix together oil, honey, water, salt and vanilla
Pour liquid over oatmeal mixture
Stir well to coat
Spread onto two greased baking sheets
Bake in 350 oven for 30 minutes, stirring frequently
Cool thoroughly
Add raisins
Store in airtight container

Dill Dip

1 cup sour cream
1 cup mayonnaise
1 Tbsp dill weed
1 Tbsp dried onion
1 Tbsp parsley
1 tsp Lowry's seasoned salt

Mix all ingredients together
Refrigerate for 24 hours

Apple Butter

2 1/2 qts of apples
5 cups white sugar
2 tsp cinnamon
1 tsp cloves
1 tsp allspice
1/2 cup lemon juice
1 qt apple cider

Cook apples until soft
Strain apples.

Add all ingredients to apples.
Cook in oven at 350 degrees for 3 to 4 hours or until thick
Stir frequently.
Put in 7 pint jars and can.

Homemade Laundry Detergent - it's AWESOME!

One bar soap
1/2 cup borax
1/2 cup washing soda

Soap:  Can use Fels-Naptha, Ivory or any bar soap that does not have added perfumes and dyes. 
Washing Soda:  This is NOT the same as baking soda.  I've found this in the laundry aisle next to the borax.  But if you're having trouble, go to the Arm and Hammer web site and call their customer service number.  They can tell you which stores in your area carry washing soda. 

Shave the one bar of soap using a small grinder.  You don't want big chunks.
Mix in borax and washing soda.
Use about 2 Tbsp per load of wash. 

Hot Dog Relish

4 cup green onions, sliced fine
1 medium head cabbage
10 green tomatoes
12 green peppers - ground fine
6 sweet red peppers - ground fine
1/2 cup salt
1 Tbsp celery seed
2 Tbsp mustard seed
1 1/2 tsp turmeric
4 cups vinegar
2 cups water

Grind vegetables using coarse blade
Sprinkle with salt and let stand overnight
Rinse and drain
Combine remaining ingredients
Pour over vegetable mixture
Heat to boiling and and simmer 3 minutes
Seal in hot sterlized jars

Makes 8 pints

Dilly Beans

1 peck string beans - ends snipped
2 1/2 cups vinegar
8 1/2 to 10 cups water
4 cloves garlic
1 red hot pepper or 2 tsp cayenne
8 heads dill or 1 Tbsp dill weed
1/4 cup salt

Cook beans for 10 minutes
Pack beans in hot jars
Mix together remaining ingredients
Add vinegar mixture to jars
Seal

Company's Best Pickles

4 qt sliced cucumbers
3 qts cold water
1/3 cup salt
3 cups cider vinegar
1 cup water
6 cups white sugar
2 Tbsp pickling spices

Soak cucumbers in cold water and salt for 3 hours
Drain
Mix together vinegar, water, white sugar and pickling spices
Bring to boil
Add cucumbers
Boil 5 minutes
Seal in hot jars

Polish Pickle Peppers

1 pint vinegar
2 1/2 qts water
2 Tbsp salt
2 tsp garlic salt
2 onions, cut fine or sliced
2 1/2 tsp mixed pickle spices
12-15 peppers - cut into strips

Boil vinegar, water, salts, onions and spices
Add pepper strips and boil another five m inutes
Pack into jars and seal.

Corn Fritters

4 eggs
1 can cream style corn
1/2 cup cracker crumbs
1 tsp salt
1/2 tsp paprika
2 Tbsp melted butter

Beat eggs well. 
Fold in remaining ingredents
Fry in butter

Meta's Favorite Roquefort Dressing

4 oz Roquefort or blue cheese
squirt of anchovy paste. 
1 clove finely chopped garlic
1/2 cup wine vinegar
1 tsp Worcestershire sauce
2 Tbsp sugar
1/2 tsp salt
1 small carton sour cream

Mix all together in blender or with electric beater.
It will be thin at first, but will thicken as it stands.
Put in closed jar and store in refrigerator. 

Escalloped Corn

1 can yellow cream style corn
3 eggs, slighly beaten
1 Tbsp sugar
3 Tbsp flour
1 cup milk
pinch of salt

Beat the eggs and add about 1/2 the corn.
With the rest of the corn, add the flour, salt and sugar. 
Add flour mixture to egg mixture and blend well.
Stir in milk.
Bake at 350 in a buttered baking dish for about 1 hour or until the center of the dish is firm.

Chicken Rice Casserole

1 can cream of mushroom soup
1/2 cup uncooked rice
1/2 cup celery, chopped
3/4 cup onion, chopped
2 3/4 cup boiling water
1 pkg dried Lipton chicken soup

Cook the Lipton chicken soup according to directions for 5 minutes

Mix all ingredients together and bake at 350 degrees for 1 1/2 hours. 

Stuffed Peppers

1 lb hamburger
3/4 cup uncooked rice
1 qt diced tomatoes or stewed tomatoes
1 tsp salt
6 large green peppers

Mix rice, hamburger and salt
Stuff peppers
Place in pan and cover with tomatoes
Add water to cover. 
Boil slowly for 90 minutes at 350 degrees. 

Old Fashioned Southern Pecan Pie

1 cup chopped pecans
1/2 cup sugar
3/4 cup dark Karo syrup
3 eggs
2 Tbsp flour
2 Tbsp melted butter
pinch salt
one uncooked pie shell

Beat eggs.
Add in all other ingredients.
Add to pie pan
Bake for 45 minutes at 350 degrees

Italian Zucchini Crescent Pie

4 cups thinly sliced zucchini
1 cup chopped onion
1/4 to 1/2 cup margarine or butter
1/2 cup chopped fresh parsley (or 2 Tbsp parsley flakes)
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp basil
1/4 tsp oregano
2 beaten eggs
2 cup shredded mozzarella cheese
8 oz can crescent dinner rolls

Preheat oven to 375 degrees

In pan, melt butter.
Add zucchini and chopped onion and cook for about 10 minutes
Stir in parsley, salt, pepper, garlic powder, basil, oregano
In separate pan, mix together beaten eggs and shredded cheese.
Add zucchini mixture. 

Open can of crescent rolls and separate
In an ungreased 10" pie pan, press rolls over bottom and up sides to form crust
Add zucchini mixture.
Bake in preheated oven for 18-20 minutes.
Let stand 10 minutes before serving. 

Sweet Potato Pone

1 cup sugar
1/2 cup butter, room temperature
1/4 tsp salt
1/2 cup milk
1 whole egg
1/4 tsp cinnamon
pinch of nutmeg
2 cups raw grated sweet potatoes
grated rind of 1 orange
juice of 1/2 orange

Mix together sugar, butter, salt, milk, egg, cinnamon and nutmeg. 
Add to grated sweet potatoes
Stir in orange rind and orange juice. 

Bake at 325 degrees for one hour. 

Pumpkin Cookies

1/2 cup shortening
1 cup sugar
1 cup pumpkin
1 egg
2 cups flour
1 tsp soda
1 tsp baking powder
1 cup chopped nuts
1 6 oz pkg semi sweet bits
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger

Mix all ingredients together. 
On a greased cookie sheet, drop teaspoonfuls of cookie dough.
Bake at 350 degrees for 10 to 15 minutes.

Texas Sheet Cake

Cake:
1 cup butter
1 cup water
4 heaping Tbsp cocoa
2 cup flour
2 cup sugar
2 eggs
1/2 tsp salt
1/2 cup sour cream
1 tsp baking soda

Frosting:
1 stick butter
6 Tbsp milk
4 Tbsp cocoa
1 pound powdered sugar
1 tsp vanilla
1 cup chopped nuts

To make cake:
Combine butter, water and cocoa in pan.  Heat to boiling, stirring well.
Remove from heat and add flour, sugar and salt.
Mix together until well blended.
Mix in sour cream, baking soda and eggs.
Pour into greased cookie sheet (15x11x1/2")
Bake about 20-25 minutes in 375 degree oven. 

To make frosting:
Combine butter, milk and cocoa in pan.  Heat to boiling, stirring well. 
Remove from  heat and add sugar, vanilla nd nuts.

While frosting is still hot, spread over the hot cake. 
Cool.
Cut into squres and refrigerate. 

Oatmeal Raisin Chocolate Chip Cookies

2 sticks butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 1/2 cup flour
1 tsp baking soda

1 tsp salt
2 1/2 cup rolled oats
1 1/2 cup raisins
1 pkg semi semi sweet chocolate chips

Whip together butter and sugars. 
Mix in eggs, one at a time.
Add baking soda, salt and mix well
Add in flour until all is stirred into dough.
Mix in oats, raisins and chocolate chips. 

Bake in 350 degree ovens for 10-12 minutes.

Browned Butter Frosting

1/3 cup soft butter
3 cups powdered sugar
1 1/2 tsp vanilla
about 2 Tbsp milk

Heat butter until golden brown.  Do not burn.
Remove from heat and mix with sugar, vanilla and enough milk to make frosting thick. 

If using with applesauce cake, put onto cake when cake is still hot. 

Applesauce Cake (to be used with Browned Butter Frosting)

2 1/2 cup flour (not self-rising)
2 cups sugar
1 1/2 tsp baking soda
1 1/2 tsp salt
1/4 tsp baking powder
3/4 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
1 1/2 cup canned applesauce
1/2 cup water
1/2 cup shortening
2 eggs
1 cup raisins
1/2 cup chopped walnuts

Heat oven to 350 degrees
Grease and flour pan
Mix all ingredients in bowl. 
Blend 1/2 minutes at low speed.
Beat 3 minutes at high speed
Bake 50-60 minutes until toothpick inserted in center comes clean. 

Mrs. Kennedy's Fruit Punch

2 large can frozen orange juice
2 small cans frozen lemonade
1 large can pineapple juice
1 large bottle ginger ale
1 cup sugar
2 cups water

Dilute orange juice and lemonade according to instructions
Mix in pineapple juice. 
Mix together sugar and water.  Add enough to the juices to make it sweet enough for your taste.
Add in ginger ale right before serving. 

Apple Crisp

1 egg
3/4 cup sugar
3 tbsp flour
1 1/4 tsp baking powder
1/8 tsp salt
1/2 cup apples, diced
1/2 cup nuts
1 tsp vanilla
1 cup brown sugar
1 tbsp butter
1 tbsp cornstarch
1 tsp vanilla
1 cup water
1 cup oats

Beat together eggs and sugar
Sift flour, baking powder and salt
Add flour mixture to egg mixture and beat well.
Add in flour, nuts and vanilla
Pour into greased pan
In a saucepan, heat brown sugar, butter, cornstarch, vanilla and water until thick.  
Stir in oats.
Top apple dish
Bake for 30 minutes in a 325 oven

Jello Cake

1 small pkg jello - whatever flavor you like
1 pkg cake mix  - whatever flavor you like
1 envelope whipped topping mix
1 pkg instant pudding (4 serving size) - whatever flavor you like
1 1/2 cold milk

Directions: 
Make cake according to package directions.
Cool 25-30 minutes

Dissolve jello mix in 3/4 cup boiling water.  Add 1/2 cup cold water.  Set aside at room temperature. 

Poke deep holes through the top of warm cake about 1" apart. 
Slowly pour jellow mixture into holes and cover entire cake. 
Refrigerate while you make the frosting.

Mix together whipped topping mix, instant pudding mix and cold milk.
Mix until stiff (about 3-8 minutes)
Immediately frost cake and refrigerate. 

Joy's Frosting for Carrot Cake

1 pkg (3 oz) cream cheese
1/2 cup soft margarine
3 cups sifted powdered sugar
1 tsp vanilla, brandy or lemon

Mix well together

Bar B Q Beans

1 lb ground beef
1/4 cup green pepper
1/2 cup chopped onion
1/2 cup chopped celery
1 8 oz can tomato sauce
1/2 cup water
2 tbsp vinegar
1 tsp dry mustard
1/2 tsp thyme
1 tbsp brown sugar
2 1/2 cup pork and beans
1 clove garlic

Salt and pepper to taste
Mix all together and pour into casserole dish
Bake for 45 minutes at 350 degrees

Hot Slaw

1/2 cabbage, shredded
2 egg yolks, slightly beaten
1/4 cup cold water
1 tbsp butter or bacon drippings
1/4 cup hot vinegar (hot as in heat, not spice)
1/2 tsp salt

Mix egg yolks, cold water, butter, vinegar and salt.  Cook in double pan over hot water, stirring constantly until thickened.  Add cabbage and serve.

Buns

Makes 4-6 dozen

8 cups flour
1 egg
1 1/2 cup milk (heat almost to boiling, then cool)
3 tbsp sugar
1 large cake of yeast
1/2 cup oil
1 1/2 cup hot water
1 tbsp salt

Knead all together. 
Let rise until double
Make buns and place on lightly greased cookie sheet.
Let rise until double again

Bake at 400 degrees for 20-25 minutes

Kranze

1 cup shortening
4 1/2 cup flour
4 tbsp sugar
1 1/2 tsp salt

Mix together like you would pie dough. 

3 eggs
1 pkg yeast
1/4 cup warm water
1 cup milk, scalded and warm

Add yeast to warm water and put aside
When bubbly, pur into eggs along with milk. 
Add liquid to flour mixture all at once. 
Mix well
Cover and let sit for four hours or overnight. 

Divide dough into four parts.
Roll thin as possible - should be about 1/4 - 1/3 inch thick. 
Brush with melted butter - sprinkle with sugar, cinnamon and/or chopped nuts.
Roll like a jelly roll, place on cookie sheet in crescent shape and snip open the top. 
Let rise 2-3 hours

Bake at 350 degrees for 25-30 minutes. 

Can top with frosting or glaze.
