Old Fashioned Apple Dumplings

2 cups sugar
1 tsp cinnamon
1/4 tsp nutmeg
2 cups water
2 Tbsp butter
2 1/2 cups flour
4 tsp baking powder
3/4 tsp salt
1/2 cup shortening
scant 3/4 cup milk
apples - sliced small

Make thin syrup by mixing sugar, cinnamon, nutmeg, water and butter.  Cook over medium heat for 5 minutes.
Keep warm
Cut shortening into sifted flour, baking powder and salt until fine as cornmeal. 
Stir in just enough milk to make soft dough.
Roll out on floured board to 1/4" thickness in rectangular form
Spread with melted butter
Top with apples
Sprinkle apples with cinnamon and sugar
Roll as for a jelly roll and slice about 3/4 inch thick
Place in large pan.
Pour syrup over apple roll slices
Bake at 350 degrees for about 45 minutes or until light brown on top

Homemade Ice Cream - this is it!

Ok - I actually found this in my other grandma's recipes.....

4 eggs
2 cups sugar
3/4 pint cream
2 Tbsp vanilla
1 1/2 quarts milk

Beat two eggs at a time
Add sugar, cream and vanilla
Stir in milk, but leave about 3 inches from the top of the ice cream maker
Mix well and freeze.

And remember - it is not recommended to eat raw eggs.  Of course, we all did it as kids and survived, but still....

Mom Zeigler's Chilla' Sauce

8 quarts ripe tomatoes
3 cups sweet red and green peppers
2 cups onions, ground fine
2 cups white sugar
1/2 cup salt
1 1/2 quarts vinegar
3 tsp cloves
3 tsp cinnamon
2 tsp ginger
2 tsp nutmeg
1 tsp black pepper
1/2 tsd hot pepper
2 tsp celery seed
5-6 jalapenos (optional if you like things spicy)

Cook all together until thick, stirring often.
Put into quart jars and seal

Hash Brown Casserole

2 pounds thawed frozen hash brown potatoes
1/2 cup butter - softened
1 tsp salt
1/4 tsp pepper
10 oz grated cheddar cheese
1 pint sour cream
1 can cream of chicken soup

Mix all together in large bowl
Put into 9x13 pan
Bake at 350 degrees for one hour

Broccoli Salad

1 bunch fresh broccoli - heads only
1 small onion, chopped
1/2 pound bacon - fried crisp and crumbled
1 cup shredded cheddar
1/2 cup mayonnaise
1/4 cup white sugar
2 Tbsp white vinegar

Mix broccoli, onion, bacon and cheese together
Mix together remaining ingredients in separate bowl and pour over salad
Refrigerate 4 hours before serving. 

Mom Staples Hot Potato Salad

4 cups cooked sliced potatoes
1/4 lb bacon - raw and cut into small pieces
3/4 cup chopped onion
2 Tbsp flour
2 tsp salt
1 egg
1/4 cup sugar
1/4 cup cider vinegar
1 cup water
1/4 cup parsley, fresh or dried
1 tsp celery seed

Fry bacon until crisp.  Remove from fat
Fry onion in fat until tender.  Remove from fat
Put flour and salt in fat to clear it
Mix egg and remaining ingredients together.  Put in frying pan
Pour hot mixture over potatoes

Home made meatballs

3 lbs ground beef
2 eggs
1 good sized onion, chopped very fine
salt
pepper
garlic salt
grated cheese (just a few tablespoons)
crackers or bread crumbs

Mix together beef, eggs, onions, salt, pepper and grated cheese
Use a fork to mix as the mixture will get pretty messy if you use your hands
Add enough crumbs to hold the meat together.
Make into balls
Fry in fat.

I use about a pound of lean ground beef, a pound of ground turkey and a pound of ground pork. I also use the italian flavored bread crumbs. Sometimes, I'll add just a dash of Worcestershire sauce as well. Yummy

Spaghetti Sauce

3 large cans tomato juice
3 cans tomato paste
All the spices below are to be used to taste. 
parsley
garlic salt
salt
pepper
bay leaf
touch of cinnamon and nutmeg

Serve with Homemade Meatballs over Vermicelli

Cook together over medium heat in large pan
Expect to cook at least 3 hours
Place homemade meatballs in sauce and let simmer another two hours

Pancakes

2 cups flour
3 tsp baking powder
1 tsp salt
2 eggs, beaten
2 cups milk
1/4 cup margarine or butter, melted

Stir together flour, sugar, baking powder and salt
Add eggs, milk and butter
Mix well
Cook in skillet on one side until bubbles form in pancakes
Turn once and cook until light brown

Breakfast Potatoes

8 medium sized potatoes, cooked and cooled
1/4 pound cheddar cheese, grated
1/2 pint whipping cream
1 small onion
1/2 stick butter
1 tsp salt

Grease a 9x13 cake pan
Peel and grate potatoes
Mix in grated cheese
Mince onion and salt in cream and pour over potatoes
Dot with butter
Bake at 400 degrees for 1 hour
Can be made early and refrigerated until it's time to bake

Caramel Corn

2 cups brown sugar
1 cup butter or margarine
1/2 cup dark Karo syrup
1 tsp butter flavor
1 tsp baking soda
9 qts air popped popcorn
peanuts (optional)

Boil brown sugar, butter and Karo for 5 minutes
Add butter flavor and soda
Pour over popcorn and stir in big roaster pan
Add peanuts
Bake at 200 degrees for one hour
Stir constantly until cool
Put into bags

Granola

6 cups rolled oats
1 cup shredded coconut
1 cup wheat germ
1/2 cup shelled sunflower seeds
3/4 cup cashews or almonds, chopped
1/2 cup sesame seeds
1/2 cup cooking oil
1/3 cup water
1 1/2 tsp salt
1 1/2 tsp vanilla
1 cup raisins

In large bowl, combine oats, coconut, wheat germ, sunflower seeds, nuts and sesame seeds.
Mix together oil, honey, water, salt and vanilla
Pour liquid over oatmeal mixture
Stir well to coat
Spread onto two greased baking sheets
Bake in 350 oven for 30 minutes, stirring frequently
Cool thoroughly
Add raisins
Store in airtight container

Dill Dip

1 cup sour cream
1 cup mayonnaise
1 Tbsp dill weed
1 Tbsp dried onion
1 Tbsp parsley
1 tsp Lowry's seasoned salt

Mix all ingredients together
Refrigerate for 24 hours

Apple Butter

2 1/2 qts of apples
5 cups white sugar
2 tsp cinnamon
1 tsp cloves
1 tsp allspice
1/2 cup lemon juice
1 qt apple cider

Cook apples until soft
Strain apples.

Add all ingredients to apples.
Cook in oven at 350 degrees for 3 to 4 hours or until thick
Stir frequently.
Put in 7 pint jars and can.

Homemade Laundry Detergent - it's AWESOME!

One bar soap
1/2 cup borax
1/2 cup washing soda

Soap:  Can use Fels-Naptha, Ivory or any bar soap that does not have added perfumes and dyes. 
Washing Soda:  This is NOT the same as baking soda.  I've found this in the laundry aisle next to the borax.  But if you're having trouble, go to the Arm and Hammer web site and call their customer service number.  They can tell you which stores in your area carry washing soda. 

Shave the one bar of soap using a small grinder.  You don't want big chunks.
Mix in borax and washing soda.
Use about 2 Tbsp per load of wash. 

Hot Dog Relish

4 cup green onions, sliced fine
1 medium head cabbage
10 green tomatoes
12 green peppers - ground fine
6 sweet red peppers - ground fine
1/2 cup salt
1 Tbsp celery seed
2 Tbsp mustard seed
1 1/2 tsp turmeric
4 cups vinegar
2 cups water

Grind vegetables using coarse blade
Sprinkle with salt and let stand overnight
Rinse and drain
Combine remaining ingredients
Pour over vegetable mixture
Heat to boiling and and simmer 3 minutes
Seal in hot sterlized jars

Makes 8 pints

Dilly Beans

1 peck string beans - ends snipped
2 1/2 cups vinegar
8 1/2 to 10 cups water
4 cloves garlic
1 red hot pepper or 2 tsp cayenne
8 heads dill or 1 Tbsp dill weed
1/4 cup salt

Cook beans for 10 minutes
Pack beans in hot jars
Mix together remaining ingredients
Add vinegar mixture to jars
Seal

Company's Best Pickles

4 qt sliced cucumbers
3 qts cold water
1/3 cup salt
3 cups cider vinegar
1 cup water
6 cups white sugar
2 Tbsp pickling spices

Soak cucumbers in cold water and salt for 3 hours
Drain
Mix together vinegar, water, white sugar and pickling spices
Bring to boil
Add cucumbers
Boil 5 minutes
Seal in hot jars

Polish Pickle Peppers

1 pint vinegar
2 1/2 qts water
2 Tbsp salt
2 tsp garlic salt
2 onions, cut fine or sliced
2 1/2 tsp mixed pickle spices
12-15 peppers - cut into strips

Boil vinegar, water, salts, onions and spices
Add pepper strips and boil another five m inutes
Pack into jars and seal.

Corn Fritters

4 eggs
1 can cream style corn
1/2 cup cracker crumbs
1 tsp salt
1/2 tsp paprika
2 Tbsp melted butter

Beat eggs well. 
Fold in remaining ingredents
Fry in butter

Meta's Favorite Roquefort Dressing

4 oz Roquefort or blue cheese
squirt of anchovy paste. 
1 clove finely chopped garlic
1/2 cup wine vinegar
1 tsp Worcestershire sauce
2 Tbsp sugar
1/2 tsp salt
1 small carton sour cream

Mix all together in blender or with electric beater.
It will be thin at first, but will thicken as it stands.
Put in closed jar and store in refrigerator. 

Escalloped Corn

1 can yellow cream style corn
3 eggs, slighly beaten
1 Tbsp sugar
3 Tbsp flour
1 cup milk
pinch of salt

Beat the eggs and add about 1/2 the corn.
With the rest of the corn, add the flour, salt and sugar. 
Add flour mixture to egg mixture and blend well.
Stir in milk.
Bake at 350 in a buttered baking dish for about 1 hour or until the center of the dish is firm.

Chicken Rice Casserole

1 can cream of mushroom soup
1/2 cup uncooked rice
1/2 cup celery, chopped
3/4 cup onion, chopped
2 3/4 cup boiling water
1 pkg dried Lipton chicken soup

Cook the Lipton chicken soup according to directions for 5 minutes

Mix all ingredients together and bake at 350 degrees for 1 1/2 hours. 

Stuffed Peppers

1 lb hamburger
3/4 cup uncooked rice
1 qt diced tomatoes or stewed tomatoes
1 tsp salt
6 large green peppers

Mix rice, hamburger and salt
Stuff peppers
Place in pan and cover with tomatoes
Add water to cover. 
Boil slowly for 90 minutes at 350 degrees. 

Old Fashioned Southern Pecan Pie

1 cup chopped pecans
1/2 cup sugar
3/4 cup dark Karo syrup
3 eggs
2 Tbsp flour
2 Tbsp melted butter
pinch salt
one uncooked pie shell

Beat eggs.
Add in all other ingredients.
Add to pie pan
Bake for 45 minutes at 350 degrees

Italian Zucchini Crescent Pie

4 cups thinly sliced zucchini
1 cup chopped onion
1/4 to 1/2 cup margarine or butter
1/2 cup chopped fresh parsley (or 2 Tbsp parsley flakes)
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp basil
1/4 tsp oregano
2 beaten eggs
2 cup shredded mozzarella cheese
8 oz can crescent dinner rolls

Preheat oven to 375 degrees

In pan, melt butter.
Add zucchini and chopped onion and cook for about 10 minutes
Stir in parsley, salt, pepper, garlic powder, basil, oregano
In separate pan, mix together beaten eggs and shredded cheese.
Add zucchini mixture. 

Open can of crescent rolls and separate
In an ungreased 10" pie pan, press rolls over bottom and up sides to form crust
Add zucchini mixture.
Bake in preheated oven for 18-20 minutes.
Let stand 10 minutes before serving. 

Sweet Potato Pone

1 cup sugar
1/2 cup butter, room temperature
1/4 tsp salt
1/2 cup milk
1 whole egg
1/4 tsp cinnamon
pinch of nutmeg
2 cups raw grated sweet potatoes
grated rind of 1 orange
juice of 1/2 orange

Mix together sugar, butter, salt, milk, egg, cinnamon and nutmeg. 
Add to grated sweet potatoes
Stir in orange rind and orange juice. 

Bake at 325 degrees for one hour. 

Pumpkin Cookies

1/2 cup shortening
1 cup sugar
1 cup pumpkin
1 egg
2 cups flour
1 tsp soda
1 tsp baking powder
1 cup chopped nuts
1 6 oz pkg semi sweet bits
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger

Mix all ingredients together. 
On a greased cookie sheet, drop teaspoonfuls of cookie dough.
Bake at 350 degrees for 10 to 15 minutes.

Texas Sheet Cake

Cake:
1 cup butter
1 cup water
4 heaping Tbsp cocoa
2 cup flour
2 cup sugar
2 eggs
1/2 tsp salt
1/2 cup sour cream
1 tsp baking soda

Frosting:
1 stick butter
6 Tbsp milk
4 Tbsp cocoa
1 pound powdered sugar
1 tsp vanilla
1 cup chopped nuts

To make cake:
Combine butter, water and cocoa in pan.  Heat to boiling, stirring well.
Remove from heat and add flour, sugar and salt.
Mix together until well blended.
Mix in sour cream, baking soda and eggs.
Pour into greased cookie sheet (15x11x1/2")
Bake about 20-25 minutes in 375 degree oven. 

To make frosting:
Combine butter, milk and cocoa in pan.  Heat to boiling, stirring well. 
Remove from  heat and add sugar, vanilla nd nuts.

While frosting is still hot, spread over the hot cake. 
Cool.
Cut into squres and refrigerate. 

Oatmeal Raisin Chocolate Chip Cookies

2 sticks butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 1/2 cup flour
1 tsp baking soda

1 tsp salt
2 1/2 cup rolled oats
1 1/2 cup raisins
1 pkg semi semi sweet chocolate chips

Whip together butter and sugars. 
Mix in eggs, one at a time.
Add baking soda, salt and mix well
Add in flour until all is stirred into dough.
Mix in oats, raisins and chocolate chips. 

Bake in 350 degree ovens for 10-12 minutes.

Browned Butter Frosting

1/3 cup soft butter
3 cups powdered sugar
1 1/2 tsp vanilla
about 2 Tbsp milk

Heat butter until golden brown.  Do not burn.
Remove from heat and mix with sugar, vanilla and enough milk to make frosting thick. 

If using with applesauce cake, put onto cake when cake is still hot. 

Applesauce Cake (to be used with Browned Butter Frosting)

2 1/2 cup flour (not self-rising)
2 cups sugar
1 1/2 tsp baking soda
1 1/2 tsp salt
1/4 tsp baking powder
3/4 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
1 1/2 cup canned applesauce
1/2 cup water
1/2 cup shortening
2 eggs
1 cup raisins
1/2 cup chopped walnuts

Heat oven to 350 degrees
Grease and flour pan
Mix all ingredients in bowl. 
Blend 1/2 minutes at low speed.
Beat 3 minutes at high speed
Bake 50-60 minutes until toothpick inserted in center comes clean. 

Mrs. Kennedy's Fruit Punch

2 large can frozen orange juice
2 small cans frozen lemonade
1 large can pineapple juice
1 large bottle ginger ale
1 cup sugar
2 cups water

Dilute orange juice and lemonade according to instructions
Mix in pineapple juice. 
Mix together sugar and water.  Add enough to the juices to make it sweet enough for your taste.
Add in ginger ale right before serving. 

Apple Crisp

1 egg
3/4 cup sugar
3 tbsp flour
1 1/4 tsp baking powder
1/8 tsp salt
1/2 cup apples, diced
1/2 cup nuts
1 tsp vanilla
1 cup brown sugar
1 tbsp butter
1 tbsp cornstarch
1 tsp vanilla
1 cup water
1 cup oats

Beat together eggs and sugar
Sift flour, baking powder and salt
Add flour mixture to egg mixture and beat well.
Add in flour, nuts and vanilla
Pour into greased pan
In a saucepan, heat brown sugar, butter, cornstarch, vanilla and water until thick.  
Stir in oats.
Top apple dish
Bake for 30 minutes in a 325 oven

Jello Cake

1 small pkg jello - whatever flavor you like
1 pkg cake mix  - whatever flavor you like
1 envelope whipped topping mix
1 pkg instant pudding (4 serving size) - whatever flavor you like
1 1/2 cold milk

Directions: 
Make cake according to package directions.
Cool 25-30 minutes

Dissolve jello mix in 3/4 cup boiling water.  Add 1/2 cup cold water.  Set aside at room temperature. 

Poke deep holes through the top of warm cake about 1" apart. 
Slowly pour jellow mixture into holes and cover entire cake. 
Refrigerate while you make the frosting.

Mix together whipped topping mix, instant pudding mix and cold milk.
Mix until stiff (about 3-8 minutes)
Immediately frost cake and refrigerate. 

Joy's Frosting for Carrot Cake

1 pkg (3 oz) cream cheese
1/2 cup soft margarine
3 cups sifted powdered sugar
1 tsp vanilla, brandy or lemon

Mix well together

Bar B Q Beans

1 lb ground beef
1/4 cup green pepper
1/2 cup chopped onion
1/2 cup chopped celery
1 8 oz can tomato sauce
1/2 cup water
2 tbsp vinegar
1 tsp dry mustard
1/2 tsp thyme
1 tbsp brown sugar
2 1/2 cup pork and beans
1 clove garlic

Salt and pepper to taste
Mix all together and pour into casserole dish
Bake for 45 minutes at 350 degrees

Hot Slaw

1/2 cabbage, shredded
2 egg yolks, slightly beaten
1/4 cup cold water
1 tbsp butter or bacon drippings
1/4 cup hot vinegar (hot as in heat, not spice)
1/2 tsp salt

Mix egg yolks, cold water, butter, vinegar and salt.  Cook in double pan over hot water, stirring constantly until thickened.  Add cabbage and serve.

Buns

Makes 4-6 dozen

8 cups flour
1 egg
1 1/2 cup milk (heat almost to boiling, then cool)
3 tbsp sugar
1 large cake of yeast
1/2 cup oil
1 1/2 cup hot water
1 tbsp salt

Knead all together. 
Let rise until double
Make buns and place on lightly greased cookie sheet.
Let rise until double again

Bake at 400 degrees for 20-25 minutes

Kranze

1 cup shortening
4 1/2 cup flour
4 tbsp sugar
1 1/2 tsp salt

Mix together like you would pie dough. 

3 eggs
1 pkg yeast
1/4 cup warm water
1 cup milk, scalded and warm

Add yeast to warm water and put aside
When bubbly, pur into eggs along with milk. 
Add liquid to flour mixture all at once. 
Mix well
Cover and let sit for four hours or overnight. 

Divide dough into four parts.
Roll thin as possible - should be about 1/4 - 1/3 inch thick. 
Brush with melted butter - sprinkle with sugar, cinnamon and/or chopped nuts.
Roll like a jelly roll, place on cookie sheet in crescent shape and snip open the top. 
Let rise 2-3 hours

Bake at 350 degrees for 25-30 minutes. 

Can top with frosting or glaze.

Mom Houk's Ham Loaf

1 1/2 lbs smoked ham - ground up fine
1 lb fresh ground pork
1 cup cracker crumbs
1 cup  milk
2 eggs

Mix all together and place into a loaf pan

Sauce:
1/2 cup brown sugar
1 Tbsp dry mustard
1/2 cup vinegar
1/2 cup water

Mix ingredients for sauce. 
Pour over meat
Bake in a 350 degree oven for 2 1/2 hours.

Bread and Butter Pickles

1 gallon thinly sliced pickles
2 cups sliced onions
1/2 cup salt
4 cups sugar
1 tsp turmeric
4 Tbsp white mustard seed
1 tsp celery seed
about 1 1/2 qts cider vinegar

Slice cucumbers and onions into very thin slices.
Put into plastic bowl
Mix with salt and sugar
Let stand for at least 3 hours then drain nearly dry
Put cucumbers and onions into saucepan.
Mix rest of ingredients together and pour over cucumbers and onions
Place over very low heat and cook until simmering - DO NOT allow to boil
Place in hot sterilized jars and seal

Rhubarb Spread

5 cups chopped rhubarb
3 cups sugar
1/2 cup water
1 3 oz pkg raspberry or strawberry jello

Mix rhubarb, sugar and water together in a sauce pan.
Bring to boil and let boil for 15 minutes
Slowly add jello
Pour in jar

Can be refrigerated or frozen

Shower Tile Cleaner

1 cup Spic and Span
1 gallon water
1 cup bleach

Mix Spic and Span in 1 gallon water
Add bleach
Scrub bathroom with bleach
Rinse

The "Threes" Ice Cream

3 cups milk
3 cups cream
3 cups sugar
juice of 3 lemons
juice of 3 oranges
3 mashed bananas

Combine milk, cream and sugar and stir until sugar is fully dissolved.
Place in ice cream maker and let get mushy.
Add juices and bananas and continue freezing

Mother Cable's Rolls

2 cups milk
1/3 cup sugar
2 yeast cakes
1/2 cup lukewarm water
8 cups sifted flour
2 tsp salt
1/2 cup melted shortening
2 eggs - beaten

Heat milk to scalding. 
Pour into a large mixing bowl and add sugar
Dissolve the 2 cakes of yeast in the lukewarm water
When the milk is lukewarm, add the yeast mixture and enough flour to make a thin batter.
Put into a warm place and let the dough become light (about 45 to 60 minutes)
Add salt, melted shortening, beaten eggs and enough flour to make a stiff dough
Knead well. 
Put in a mixing bowl that has been well buttered
Put in a warm place and allow it to rise until double in bulk.
Knead the dough and use in making coffee cakes. 

*Note: there is no additional instructions ( bake at so many degrees for so many minutes).  If I find something, I'll be sure to come back and add it in. 

Griddle Cakes

1 egg
1 cup milk
4 Tbsp melted butter
1 1/2 cup flour
3 1/2 tsp baking powder
3 Tbsp sugar
3/4 tsp salt

Mix all together
Fry as you would a pancake. 

Pizza Dough

Makes 2 12" pizzas

1 1/4 cup warm water
1 pkg dry yeast
1 tsp sugar
1 tsp salt
2 Tbsp oil
3 1/2 cups flour

Mix together warm water and yeast.  Let set until yeast starts to bubble a little.
Add sugar, salt, oil and 2 cups of the flour. 
Mix well until smooth.
Add remaining 1 1/2 cups flour and knead until smoth.
Oil wood or plastic bowl.  Add dough.  Oil top of dough. 
Let rise in bowl until double - takes about 2 hours

Punch down dough and knead for just a minute.
Roll out dough to fit pan.
Spread a little oil on top
Bake about 10 minutes in a 400 degree oven.
Remove from oven and put on your pizza toppings
Bake another 20 - 25 minutes until pizza is crisp and cheese is melted and bubbly.

Onion Fried Chicken

1 envelope Lipton onion soup mix
1 1/2 cup corn flake crumbs or dry bread crumbs
1 Tbsp parsley flakes
2 eggs - well beaten
1/4 cup milk
2 1/2 to 3 lbs chicken

Mix egg and milk together as the first dipping mixture
Mix together onion mix and cornflakes
Dip chicken pieces into egg and milk mix, then dip into cornflake mixture.
Brown in skillet - cook for 30 minutes

Serve with Onion Butter
1 envelope Lipton onion soup mix
1/2 lb butter or margarine
Melt butter and add onion soup mix.
Use as dip or as a sauce.

Fran Houk's Lasagna

About 12 lasagna noodles
1 cup chopped onion
1 cup chopped green pepper
2 garlic cloves - minced or grated
2 Tbsp oil
1 1/2 lb hamburger or mixture of italian sausage and hamburger
1 large can stewed tomatoes
2 cups tomato paste
1 1/2 tsp salt
1 Tbsp sugar
3/4 tsp oregano
1/2 tsp Worcestershire sauce
1 1/2 tsp pepper
2 cups mushrooms
12 oz mozzerella cheese
1/2 cup parmesan cheese
2 or 3 cups ricotta cheese

Create layer one: 
Sweat onions, green pepper and garlic in oil.
Add meat and cook until brown.
Add tomatoes, tomato paste, salt, sugar, oregano, Worcestershire sauce, mushrooms and pepper
Let cook while you work on the other layers

Boil lasagna noodles and drain

Create layer three:
Reserve a handful of mozzerella for the top then mix the rest with the parmesan and ricotta cheeses.

Layer lasagna by first putting some tomato sauce, then noodles, then cheese. 
Top with shredded mozzerella.

 Bake at 350 degrees for 35 minutes.

Mrs. Lutner's Piccalilli

1-15 mediume sized pickle cubes
1 chip basket green firm tomatoes
4 large green peppers
4 large onions
4 medium peppers (for color)
1 whole bunch celery
1 large head cauliflower

Slice and cup up all vegetables and soak in ice water. 
Pour in colander and drain water. 

Add the following to a sauce pot and heat well - Do Not Boil!
5 1/2 cup vinegar
5 cups sugar
2 tsp mustard seed
1 tsp whole cloves
(put mustard seed and whole cloves in cloth bag - you will be removing them later)
1 tsp turmeric
1/2 cup salt

Add cut up vegetables to canning jars.
Add vinegar sauce
Seal in jars - boil in water 15-20 minutes.

Beer Bread

3 cups self rising flour
3 Tbsp sugar
1 can beer

Mix alltogether
Bake at 350 degrees for 45 minutes.
About ten minutes before removing bread, brush the top with beaten egg whites. 

Aunt JoAnne's Strawberry Slush

9 cups water
2 cups sugar
1 12 oz frozen orange juice
2 10 oz frozen strawberries
1 pkg strawberry or cherry cool aid
2 cups vodka

Bring water to a boil
Turn off heat
Add all ingredients and stir until dissolved.
Let cool
Freeze and break into pieces.
Serve in a glass with 7 up.

Chicken Kiev

Herb butter:
1 cup butter
2 Tbsp parsley
3/4 tsp salt
1/2 tsp tarragon leaves
1 clove garlic - crushed
1/2 tsp pepper

6 boned chicken breasts
3/4 cup flour
1 1/2 cup dry bread crumbs
3 eggs

Mix butter and spices - spread on foil 1/4" thick, 6" square.  Freeze and cut into 12 pats

Flatted boned and skinned breasts to 1/4" thick.  Fold around butter and fasten with a toothpick.
Roll chicken in flour, dip in eggs and then roll in crumbs.
Refrigerate chicken in covered dish for at least 1 hour.

Cook in a 360 degree oven for 35 minutes each side. 
Make sure chicken is completely cooked before removing from oven. 

Grandma's Beef Stew

I don't really know what this is called - she didn't title it, but she did mark the recipe with this comment:  "Excellent with brocolli"

1 lb boneless beef - sliced
2 Tbsp soy sauce
2 Tbsp + 4 tsp cornstarch
3 Tbsp oil
2 cloves garlic - minced
1/2 cup onion chunks
1 cup beef broth or water
1/4 lb pea pods (about 30-35)
salt and pepper to taste

Make cornstarch mixture by mixing 4 tsp cornstarch and 1/2 cup water.  Mix well and set aside. 
Mix beef with 1 Tbsp soy sauce, garlic, onion, salt and pepper and 2 Tbsp corn starch
Heat 2 Tbsp oil on high heat.
Add beef mixture and fry until done.
Remove meat from pan and set aside.
Heat 1 Tbsp oil in pan
Add pea pods.  Stir in 1 Tbsp soy sauce and broth.
Add cornstarch mixture a little at a time until sauce is thick.
Add cook beef and mix well. 

Amanda's Cookies

2/3 cup shortening
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 1/2 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 pkg 6 oz chocolate chips
1/2 cup crushed peppermint stick candy

Beat shortening and sugars together until creamy.
Add egg and vanilla.
Add dry ingredients and mix well. 
Bake at 350 degrees for about 10 minutes or until done.  

White Chicken Chili

4 chicken breasts - diced
1 small onion - chopped
2 large cloves garlic - minced
1 Tbsp oil
1 tsp each of cumin, chili powder, pepper, sugar and cilantro
2 cans diced tomatoes
2 cans chicken brother (4 cups)
1 small can diced green chilis
2 cans white beans - drained
2 cups Monterey Jack shredded cheese
2 cups frozen white corn

Sautee onions and garlic in oil. 
Add chicken and cook until done (about 10 minutes)
Add tomatoes, chicken broth, chilis, spices and beans.
Simmer about 2 hours - leave lid on for part of the time
At about 20 minutes before serving, add shredded cheese.
Cook and stir slowly until cheese is melted

Lush Slush

7 cups water
2 cups sugar
2 cups boiling water
4 green tea bags
1 12 oz frozen orange juice
1 12 oz frozen lemonade
2 cups gin or brandy

Heat sugar and water until sugar dissolves.  Let cool
Mix together boiling water and tea bags. Let cool.  Remove tea bags
Mix together everything in plastic container. 
Freeze
To serve: use 2 ice cream scoops of mix and fill the rest of the glass with 7 up.

Joy's German Potato Salad

3 cup diced cooked potatoes
4 slices bacon
1 onion, diced
1/4 cup vinegar
2 Tbsp water
3 Tbsp sugar
1 tsp salt
1 tsp pepper
1 Tbsp parsley

Chop bacon and fry
Brown onion in fat
Add vinegar, water, sugar, salt and pepper.
Allow to boil
Add to potatoes and parsley
Serve warm. 
If too runny, thicken with a little flour/water mixture.

Hungarian Stew.

5 oinions, chopped
6 Tbsp fat (or oil)
2 pounds beef like cubed pot roast
1/2 tsp salt
dash marjoram
1/4 tsp pepper
1 clove garlick, minced
3/4 cup white wine
1/2 lb bacon - chopped
2 cup sour cream

Brown onions in fat. 
Add meat, salt, pepper, garlic, marjoram and wine.
Simmer with the lid on until meat is tender.  Should take about an hour.
Cook bacon until crisp.  Add to meat mixture.
Stir in sour cream and continue cooking for 15-30 minutes longer. 

Hamburger Pie

1 pound hamburger
1 md chopped onion
1/2 tsp pepper
1 tsp salt
1 cup tomato soup
1 cup whole kernel corn, drained
2 cups mashed potatoes
1/2 cup milk, warmed
1 egg, beaten
salt and pepper

Cook onion in oil.
Add beef, salt and pepper. 
Drain off liquids
Add corn, soup and stir together.
Pour in greased 1 1/2 quart casserole

Mix mashed potatoes, milk and egg together.
Season with salt and pepper.
Spread over beef.

Bake for 30 minutes in 350 degree oven.

A Man's Casserole

LOL - Seriously - that's the name of the recipe!!!

1 12 oz pkg thin egg noodles
3-4 Tbsp chopped onions
2 tbsp melted margarine
2 pounds ground beef
1 Tbsp oil
2 tsp salt
1 tsp pepper
1 can tomato or celery soup
1/2 cup evaporated milk
1 1/2 cup shredded cheddar cheese

Cook noodles and drain
Saute onions in margarine - set aside
Brown meat in oil.
Add salt and pepper and sauteed onions
Combine soup and milk

Arrange 1/3 of noodles, half of meat and half of soup mixture in layers in greased 4 qt casserole dish. 
Repeat layers
Sprinkle cheese on top
Bake at 250 degrees for 1 hour

Fudge for Middle of Cake

from Dee

2 cup powdered sugar - sifted
1/2 tsp salt
1 tsp vanilla
1/4 cup milk - scalded
2 quares unsweetened chocolate
3 Tbsp gutter

Place sugar, salt and vanilla in a small mixing bowl.
Add milk and mix untiil sugar is dissolved. 
Melt chocolate and butter together.
Add to first mixture
Heat all slowly until you get a spreading consistency. 

Apricot Brandy Slush

9 cups water
1 cup sugar
16 oz orange juice
12 oz lemonade
A fifth of apricot brandy

Boil sugar and water together and cool
Add the remaining ingredients.
Serve over ice

Bluebottom Ice Cream Pie

4 cups fresh blueberries
1 cup sugar
2 cups water
3/4 cup cornstarch
1 9 inch graham cracker pie crust
1 qt vanilla ice cream (slightly softened)
2 Tbsp orange juice

Mix together blueberries and sugar. 
Mix water and cornstarch and pour into blueberry mixture.
Simmer until sauce is thickened.  Reserve 1/2 cup of the mixture for decorating the top of the pie. 
Cool.

Spoon blueberry filling over crust. 
Spoon ice cream over filling.
Beat orange juice into reserved filling
Drizzle over ice cream.
Freeze
Remove pie 30 minutes before serving, to thaw just enough to cut. 

Pineapple Sherbet

from Mildred

1 cup sugar
1 cup crushed pineapple
4 Tbsp lemon juice
2 cup milk
1 egg white, beaten

Mix sugar, pineapple and lemon juice.
Slowly add milk while stirring. 
Fold in egg whites.
Pour into tray.
Place in freezer and stir every 20 minutes for 1 hour

*Again - this recipe uses raw egg whites.  It might be possible to use the pasteurized liquid egg whites, but I'm not sure. 

Chicken Loaf

4 cups diced cooked chicken
1 cup chicken broth
1 1/2 cup milk
4 well beaten eggs
2 cups bread crumbs
1 cup cooked rice
3/4 cup chopped celery
7 Tbsp chopped pimento
salt to taste

Mix all ingredients together. 
Spread in 13x9 pan.
Bake at 300 degrees for 1 hour

Tuna-Macaroni Bake

2 eggs, beaten
3/4 cup canned milk
1/2 cup water
3/4 tsp dry mustard
1Tbsp chopped onion
3/4 tsp salt
3 cup cooked macaroni
3/4 cup grated cheese
1 can tuna

Mix all together and put in greased 2 qt dish.  Bake at 375 degrees for 1 hour or until lightly brown. 

Macaroni and Beef

3/4 lb ground beef
1/2 lb uncooked macaroni (about 1 cup)
1/4 cup minced onion
1/4 cup green pepper
1 8 oz can tomato sauce
1/2 cup water
1 tsp salt
1/4 tsp pepper
3/4 Tbsp Worcestershire sauce

Brown beef in skillet and remove meat.  In meat drippings, add uncooked macaroni, onion, pepper until onion is soft.  Return meat to skillet.  Add sauce, water, salt, pepper and Worcestershire sauce.  Cover and simmer 25 minutes or until macaroni is cooked. 

French Dressing

1 can tomato soup
3/4 cup vinegar
3/4 cup sugar
1 cup oil
2 tsp salt (scant)
2 tsp paprika
1 tsp dry mustard
1 tsp minced onion

Put in blender.

Chilla Sauce

18 ripe tomatoes, cut fine
1 green pepper, cut fine
1 onion, cut fine
1 Tbsp salt
1 cup sugar
2 cups vinegar
2 Tbsp mixed spices

Boil and bottle for use.

Home-made Catsup

1 bushel ripe tomatoes, washed and cut
6 onions, chopped fine
1/2 cup salt
1/2 lb mixed spices (tied in bag)
1 cup brown sugar
1 qt vinegar
dash black pepper

Boil tomatoes and onions - rub through sieve.
Add salt, bag of spices, brown sugar, vinegar and black pepper and boil until thick. 
Seal in bottles while hot. 

Chow Chow

1 gallon green tomatoes
1 head cabbage
2 carrots
4 strains celery
1 qt onion
1 cup sugar
1 qt vinegar
salt to taste
Mixed spices

Cook about 2 hours
Can

Tomato Soup

It seems to me that this recipe doesn't have enough liquids, but who knows????

1 pkg ripe tomatoes
12 onions
6 carrots
8 cloves
1 bunch of celery
1/2 cup flour
1/2 cup butter
1/4 cup salt
1 cup of sugar


After cutting vegetables - cover tomatoes, onions, carrots, cloves and celery with water and boil for 45 minutes. 
Strain through a sieve. 
Mix flour, butter salt and sugar together and stir into tomatoe mixture.
Boil 15 more minutes.
Seal hot
Makes 11 pints

Pepper Hash

15 onions
24 sweet peppers, green and red
1 1/2 cup sugar
3 Tbsp salt
2 1/2 pints vinegar
15 green tomatoes

Remove seeds from peppers.
Chop onions, peppers and tomatoes. 
Cover with boiling water and let stand 5 minutes.
Drain, then add salt, sugar and vinegar. 

Bring to boil and can

Sandwich Spread

1 doz green tomatoes
12 green peppers
12 red peppers
2 hot peppers
6 onions

1 cup vinegar
1/2 cup water
3 cups sugar
1 pint french mustard
4 tsp salt
1/2 cup flour (mixed with enough water to make paste)
1 qt Miracle Whip

Clean and wash vegetables.  Grind into small pieces.  Pour boiling water over ground vegetables and let stand 2 minutes.  Drain in colander.

Cook vinegar, water, sugar, mustard, salt for 10 minutes. 
Remove from heat and stir in flour mixture.
Return to heat and let come to a boil. 
Add ground vegetagbles and cook 10 minutes while stirring. 
While cooking, add miracle whip.

Seal in jars while hot.

Zucchini Bread

3 eggs
3/4 cup oil
1 3/4 cup sugar

2 tsp vanilla
3 cups flour
1 tsp soda
1 tsp baking powder
1 tsp salt
1 cup dreained crushed pineapple
1 cup nuts
14-16 chopped marachino cherries
2 cups unpeeled grated zucchini

Mix in order given. 
Use 2 loaf pans or 6 small pans.
Bake at 350 degrees
If using loaf pan, bake for one hour
If using small pans, bake for 45 minutes

Hot Turkey Salad

6 slices white bread
2 cups cooked turkey
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1/2 cup mayonnaise
3/4 tsp salt
dash pepepr
2 eggs
1 1/2 cup milk
1 can cream of mushroom soup
1/2 cup shredded cheese

Cube 2 slices of bread in a 9x9 pan.
Combine turkey, mayonnaise and seasoning. Spoon over bread
Arrange remaining bread cubes on top of mixture.
Pour egg and milk mixture over and chill 1 hour or overnight.
Spoon soup on top
Bake at 325 degrees for 1 hour.
Add cheese the last few minutes

Salad Dressing

1/2 cup sugar
1/4 cup vinegar
1/4 cup water
1 tsp flour
2 eggs
1/4 tsp salt
2 heaping Tbsp mayonnaise
1/4 tsp mustard

Mix sugar, flour and eggs.  Beat well
Add in vinegar, water and salt.  Add to sugar mixture. 
Boil until thick.
Remove from heat and add mayonaise and mustard. 
Beat well.
Let cool. 

Southern Comfort Punch

1 6 oz can frozen orange juice
2 6 oz can frozen lemonade
1 cup real lemon juice
2 1/2 cup Southern Comfort
4 cups water
7-up to taste

Mix all together.

Shortbread

1 pound of butter
4 cups of flour
1 cup white sugar

Cream butter and sugar well.  Work in flour a little at a time. 
Shape on cookie sheet. 
Prick with fork every couple inches.
Bake at 325 degrees for 30-35 minutes.

If you like, sprinkle with sugar and cut into squares

Oatmeal Banana Cupcakes

1/2 cup sugar
1/2 cup butter or oleo
2 eggs
3 medium mashed bananas (1 cup)
3/4 cup honey
1 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 cup quick cooking rolled oats

Cream sugar and butter.
Beat in eggs, bananas and honey.
Stir together flour, baking powder, baking soda and salt. 
Add dry mixture to cream mixture and beat until just blended.
Stir in oat meal. 
Fill 24 cupcake papers cups.
Bake at 375 degrees for 18-20 minutes

Sour Cream Scalloped Potatoes w Ham

2 slices of ham - 1/2 inch thick, cut into 8 pieces
1 can cream of mushroom soup
1 cup sour cream
1 tsp salt
dash pepper
8 medium potatoes, thinly sliced
1 large onion, thinly sliced
1 cup shredded cheddar cheese

Combine soup, sour cream, salt and pepper
In a greased 3 qt casserole dish, alternate layers of ham, potatoes, onions and soup mixture
Top with cheese.

Bake at 325 degrees for 2 1/2 hours

Greg's Favorite Black Bottom Cupcakes

Chocolate Batter:
1 1/3 cup flour
1/4 cup cocoa

1 tsp soda
1 cup sugar
1 cup water
1/3 cup oil
1 tsp vanilla

Mix dry ingredients first. 
Add liquid ingredients and mix until blended.  Batter will be thin
Fill cupcake papers about 1/3 full

Topping:
1 8 oz container cream cheese - softened and at room temperature
1/3 cup sugar
1 egg
1 6 oz pkg chocolate chip

Stir cream cheese until lumps are out.
Add sugar and egg and mix.
Mix in chocolate chips.
Put 1 heaping teaspoon of cream cheese mixture in each cupcake paper.  It will sink into chocolate batter.
Sprinkle tops with sugar and chopped nuts, if desired. 

Bake at 350 degrees for 30-35 minutes.
Makes about 18-20 cupcakes.

Carrot Pineapple Cake

1 1/2 cups all purpose flour
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
2/3 cup cooking oil
2 eggs
1 cup finely shredded raw carrot
1/2 cup crushed pineapple (in syrup)
1 tsp vanilla

In large bowl, stir together dry ingredients.  Add oil, eggs, carrot, pineapple and vanilla.  Mix until all ingredients are moistened.  Beat with electric mixer at medium speed. 
Pour into greased and lightly floured 9x13 inch pan. 
Bake in a 350 degree oven for about 35 minutes.  Cool.

Frosting:
3 oz package of cream cheese (softened and at room temperature)
4 tbsp softened butter or margarine
1 tsp vanilla
dash salt
2 1/2 cup sifted powdered sugar
1/2 cup chopped pecans

Cream together cream cheese and butter. 
Add butter, vanilla and salt - continue beating. 
Gradually add in powdered sugar and mix till creamy. 
Stir in pecans. 

Top cake and serve.

Grandma has a note that she added raisins in the cake mix.

1 box powdered sugar
1/3 cup crisco
1/3 cup milk
1 tsp vanilla

Beat for 10 minutes

Wedding Icing

1 stick oleo
1/2 cup crisco
1 cup white sugar
1 cup milk

Cream together oleo, crisco and sugar until well blended.  Heat the milk to lukewarm and gradually add to oleo mixture while blending. 

Enough for 2 layer cake.

Butterscotch Coffee Cake

1 box Duncan Hines yellow cake mix
1 small box butterscotch jello instant pudding
4 eggs
3/4 cup oil
2/3 cup water
Mix all together and beat with electric mixture until for 8 minutes.

Mixture:
1 cup sugar
1 cup finely ground nuts
1 tsp cinnamon
mix all together

In greased angel food cake pan, layer batter and mixture.

Bake at 350 for 45 to 60 minutes. 

Cook for one hour right side up.

Lemon Jello Cake

1 box lemon velvet cake mix
4 eggs
1 pkg lemon jello
3/4 cup oil
3/4 cup water

Mix all together and cook until done in a 9x13 cake pan. 
When slightly cool, prick with a fork and drip glaze over cake. 

Glaze: 
Juice of 1 lemon
1 cup powdered sugar

Let cool. 

Topping:
2/3 cup sweetened condensed milk
1/2 cup lemon juice
1/2 tsp vanilla or rum flavoring

Combine topping ingredients and stir until well blended.  Chill until ready to serve cake.  Before serving, drizzle topping over cake .

Grapes with Champagne

2 Tbsp whipping cream (but do not whip)
5 egg yolks
1/3 cup sugar
3/4 cup champagne

Mix all together and cook over double boiler until it sets. 

Spoon over cool grapes already placed in glasses.

Cookie Dough

Not sure what kind of cookie dough this is, but it sure looks sweet.  You can also halve the recipe. 

4 sticks butter
3 cups sifted confectioners sugar
2 eggs
2 tsp vanilla
5 cups sifted flour
2 tsp baking soda
2 tsp cream of tartar
1/2 tsp salt

Use rounded teaspoon full.  Bake in 400 degree oven for 7 minutes

No Cook Ice Cream

Ok - I don't recommend using this recipe as it is.  There are just too many uncooked eggs.  But - we all used to eat it as kids and we are all fine (well - at least most of us are - ha ha).  We had to take turns with cranking it down in the basement. 

Aunt Ellen mentioned perhaps using the pasteurized liquid eggs from the grocery store would work, but we haven't tried it, so I don't know. 

8 eggs
1 cup sugar
2 Tbsp vanilla
1 quart cream
1 can condensed milk

Mix all together.  Fill ice cream maker to 2" from top.  Make the ice cream per your maker's instructions. 

Sauce for Asparagus

6 Tbsp chopped onion
2 Tbsp butter
2 cup sour cream
2/3 cup mayonnaise
2 Tbsp lemon juice
1/2 tsp salt
1/4 tsp green pepper
4 pounds cooked fresh asparagus

Sautee onion in butter.  Stir in rest, but do not boil.
Drizzle over the asparagus.

Rolls

1 cup hot water
1 cup milk
4 Tbsp shortening (melted)
4 Tbsp sugar
3 tsp salt
1 egg
1/2 cake yeast (I'm not sure how many tsps a cake is...)
2 cup flour + 4 cups flour

Beat until smooth using two cups of flour
Add the remaining four cups of flour and mix well.
Let rise 1 hour. 
Put into pans.
Bake 20 minutes at 375 degrees

Steak Salad Dressing

2 heaping tsp corn starch
6 Tbsp sugar
1/2 cup vinegar
4 Tbsp water
1 1/2 tsp salt
3 slices bacon - chopped and fried

microwave 2-3 minutes. 

Grams' notes:  Joy puts together lettuce, hard boiled eggs, cucumbers, tomatoes, french fries and steak. Then she adds the warm dressing. 

I remember using spinach instead and boy - was that good!

Chocolate Chip Cookies

I always knew I was grandma's favorite when she baked chocolate chip cookies and brought them to me at college (wink, wink!). 

1 cup butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
2 Tbsp hot water
1 tsp vanilla
2 1/2 cup flour
1/2 tsp salt
1 tsp baking soda


Cream together butter and sugars.  Add eggs, water and vanilla.  Sift flour, salt and soda and add dry ingredients to the wet ones. 

Drop by the teaspoonful onto a baking sheet.  Bake at 350 degrees for 10-12 minutes.  Makes 60 cookies

Rose's Sandwich Filling

1 1/2 cup chipped ham
1/2 cup grated cheese
5 green onions
4 eggs
1/2 cup chilli sauce (recipe to follow later)
1 cup mayonaise

Mix all together.  Put in refrigerator for 7 hours.
Cut buns or a loaf of french bread.
Add filling and wrap in tin foil.

Put in 400 degree oven for 10-15 minutes. 

Doris' Icing

1 box powdered sugar
1/2 cup crisco
1/3 cup milk
1 Tbsp vanilla
dash salt

Beat slowly until mixed then beat 15 minutes more

Apple Kuchen

1 cup flour
2 Tbsp sugar
1/4 tsp salt
1/2 cup butter

Mix together with pastry blender.  Pat into a 9x9 pan

5 cups apples - peeled and sliced
1/2 cup sugar
1/2 tsp cinnamon

Mix together.  Add to the pastry.
Bake 350 degrees for 45-50 minutes

Topping: 
1/2 cup flour
1/2 cup sugar
1/4 tsp salt
4 Tbsp butter
Mix together and make crumbly.  Top off the apple mixture when it comes out of the oven.

**NOTE:  instead of apples, you can also use 2 1/2 cup strawberries, 2 1/2 cup rhubarb and 3/4 cup sugar. 

Banana Bread

1 cup sugar
2 eggs
pinch salt
1/2 tsp baking powder
3/4 cup nuts
1/2 cup shortening
3 bananas (about 1 cup mashed)
1 tsp baking soda
1 1/2 cup flour

Cream shortening and sugar together.
Add the rest of the ingredients and mix together. 

Pour into two greased bread pans. 

Bake at 325 for 40-50 minutes.

Sugar Cookies

1 cup butter
1 1/2 cup sifted confectioners sugar
1 egg
1 tsp vanilla
2 1/2 cup sifted flour
1 tsp baking soda
1 tsp cream of tartar
1/4 tsp salt

Cream butter and sugar until fluffy.
Add egg and vanilla.  Beat well.
Sift together dry ingredients and blend into creamed mixture. 
Chill in refrigerator - it doesn't say how long, but I would guess until it's firm enough to work with?
Roll out on floured board and cut out with cookie shapes. 

Bake 6 minutes at 400 degrees.

Pizzelles

Ok - this is the recipe she had written down, but if you ever saw Gram actually make the pizzelles, she took liberties with the extracts - sometimes just pouring the entire bottle in.  So - feel free to play with the ingredients.

3 1/2 cup sugar
2 cups crisco
2 Tbsp lemon extract
2 Tbsp anise extract
2 Tbsp rum extract
1 dozen eggs
about 7 cups of flour
2 Tbsp baking powder

Mix all together and use a pizzelle maker.

Peanut Blossoms

1/2 cup shortening
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
2 Tbsp milk
1 tsp vanilla
1 3/4 cup flour
1 tsp soda
1/2 tsp salt

Cream together shortening, peanut butter, sugar and brown sugar
Add egg milk and vanilla - beat well

Blend in dry ingredients.

Shape dough into 1 tsp balls.  Roll in sugar and place on ungreased cookie sheet.

Bake at 375 for 8 minutes.
Remove from oven and place kiss on top - pressing down so cookie cracks around edges. 

Return to oven and bake 2-5 minutes longer.

Apple/Yam Bake

I believe this is from my Aunt Joy - either that or grandma was doodling on the recipe....

Use  a 1 1/2 qt baking dish

2 apples - sliced
1/2 cup nuts
1/2 cups brown sugar - packed
1/2 tsp cinnamon
2 17 oz cans of sweet potatoes (yams) - drained
1/4 cup margarine
2 cups miniature marshmallows

Toss apples, nuts, brown sugar and cinnamon
Alternate layers of apples and yams
Bake at 350 degrees 35 to 40 minutes

Put marshmallows on top and bake another 10 minutes

Raisin Puff Cookies

1 cup seedless raisins
1 cup golden raisins
1 cup water

Cook until water is gone, but watch so it doesn't burn.  Set aside.

1 cup shortening
1 1/2 cup sugar
2 eggs
1 tsp vanilla
 3 1/2 cups flour
1 tsp salt
1 tsp baking soda
grated peel of one orange (about 1 Tbsp)

Cream shortening, add sugar and mix well.  Add eggs and vanilla and mix well.
Add dry ingredients a little a time until the flour is mixed in.  Add raisins and mix. 
Form one inch balls and roll in granulated sugar. Bake on greased cookie sheet in 400 degree oven for 10-12 minutes.

Note:  I remember grandma making these, but the raisins were a filling and not mixed in...  Hmm - I'll have to keep looking through her recipes to find the right one.

Hard Candy

3 3/4 cups granulated sugar
1 1/2 cup white corn syrup
1 cup water
1/9 tsp desired food coloring
1 dram desired flavoring oil
powdered sugar (use after cooking)

Combine sugar, syrup and water in heavy saucepan, stirring with a wooden spoon.  Boil until temperature reaches 310 degrees.   Then add the desired food coloring and flavoring oil.

Pour into a buttered 7 inch square pan and while still warm, mark into small squares.  When cool and hard, break into pieces and dust with powdered sugar to keep pieces from sticking together. 

Store in airtight container. 
Suggested combinations of flavors and colors:
Lemon - dark yellow
Orange - orange
Clove - toast
Peppermint - pink
Cinnamon - red
Spearmint - green
Sassafras - Blue
Anise - Black
Wintergreen - no color
Butter - yellow
Lime - green
Cherry - red
Raspberry - red

Strawberry Pie

2 Tbsp corn starch
1 cup sugar
1 1/2 water
1 small box strawberry jello
Sliced or quartered strawberries
1 pie crust

Mix all together.  Add to pie crust and refrigerate for 8 hours

Brownies

Make brownies in cookie sheet:
2 cups flour
2 cups sugar
2 sticks oleo
2 eggs
4 Tbsp cocoa
1 cup water
1/2 cup sour milk (1/2 cup milk + 1 tsp vinegar)
1 tsp baking soda
1 tsp vanilla

Mix sugar and flour together in a large bowl. 
Heat oleo, cocoa and water in a sauce pan until it reaches a boiling point.
Pour hot mixture over dry ingredients. 
Add milk to soda, eggs and vanilla.
Mix well
Pour batter into a greased and floured pan - 11x16x1 cookie sheet. 
It doesn't say how long to bake it, so Grandma must have just known.  Maybe I'll make some and see what a good time is....????

Mix icing while cake is in oven. 

Icing
1 stick oleo
3 Tbsp cocoa
5 Tbsp milk
1 tsp vanilla
1/2 cup chopped nuts
1 box (4 cups) powdered sugar

Put oleo, cocoa and milk in a pan.
Heat slowly until melted.
Remove from stove (when cake is almost done) and add powdered sugar. 
Blend well - add vanilla and nuts. 
Spread over hot cake as soon as taken from the oven.

Pinwheel Cookies

1/3 cup shortening
1/2 cup sugar
1 egg yolk
1/2 tsp vanilla
3 Tbsp milk
1/12 cup cake flour
1/2 tsp salt
1/2 tsp baking powder
1 oz melted square chocolate

Cream together sugar and shortening.
Add egg yolk, vanilla and milk.  Beat until mixed.
Sift and add flour, salt, baking powder

Divide into 2 parts
Add melted chocolate to one. 
Chill at least one hour.
Roll out on wax paper into the same sized squares. 
Place the chocolate on the white. 

Starting at one end, roll into a log-shape. 
Cut into cookie pieces. 

Bake in a 375 degree oven for 10-15 minutes.

Butter Cookies

Use unbuttered cookie sheet

1 c butter
1 1/2 cup sifted confectioners sugar
1 egg
1 tsp vanilla
2 1/2 cup sifted flour
1 tsp baking soda
1 tsp cream of tarter
1/4 tsp salt

Cream together butter and sugar
Add egg and vanilla - beat well
Add dry ingredients
Divide dough and chill
Roll out and cut

Bake in a 400 degree oven for about 6 minutes.

Makes 65 cookies

French Pastry Dough (used for Lady Fingers)

The night before - mix together: 
1/2 lb oleo
3 cups flour
2 Tbsp sugar.
(can add vanilla, but doesn't say how much)

The next morning, mix in 1 cup water.  Put in the refrigerator for 20 minutes
Take dough out of refrigerator and roll out
Spread 1/4 lb oleo on dough - fold up like an envelope and put back in refrigerator for 20 minutes.
Take out and roll out again.
Spread another 1/4 lb oleo on dough.
Fold up again and put back in refrigerator for 20 minutes
Cut into four pieces.
Roll out one strip at a time.  Cut 1/2 wide and wrap around a stick.
Bake at 350 degrees for 20 minutes.

In another recipe, I found a recipe for the filling:
1 cup milk
5 tbsp flour
1 cup shortening (prefer Crisco - which makes it white)
1 cup sugar
1 tbsp vanilla
6 tbsp marshmallow whip
(cocoa - optional)

Mix together milk and flour.  Cook until thick and allow to cool.
Mix together shortening, sugar and vanilla.  Cream until well blended.
Add marshmallow whip and cocoa if you want chocolate filling
Add cooled paste, beat 10 minutes with  mixer at high speed. 
Chill well in refrigerator before filling lady fingers.
